How we buy it
Ajwain is bought on smell as much as on sight. Old stock loses its punch, and no amount of cleaning brings it back, so we would rather tell you to wait for the new crop than ship you something flat. Volumes are much smaller than cumin or fennel, which means booking early is the difference between getting your quantity and getting an apology.

Ajwain sits with the other spices in 0910 99 rather than with cumin and fennel in 0909.
