How we buy it

Every kitchen and every packer has its own ratio, and the common ones run anywhere from three parts coriander to one part cumin up to equal parts. There is no standard, so the first thing we ask for is yours. Both halves are milled cool and blended to order rather than pulled off a shelf, and the same rule applies as with plain coriander: we grind close to shipment, because a blend that sat through a summer is a different product from the one you approved.
