How we buy it

Star anise is one of the few things on this list that does not grow in Gujarat, so origin and the age of the crop matter more than anything we can do to it afterwards. What a buyer notices on arrival is whether the stars are whole rather than broken into points, and whether the sweet anise smell survived the voyage — both come down to drying and packing at source. We buy on those two things and pack it so it does not rattle itself to pieces in transit.

Typical uses

Masala blends and garam masala, biryani and stocks, confectionery and liqueurs, tea blends, and extraction of anethole and star anise oil.
